Pecan Nut & Vanilla Pie by Freedom Hill

 PECAN NUT AND VANILLA PIE

  • Castor Sugar
  • 2 Cups Butter
  • 125 Grams Cream
  • 1 Cup Maple Syrup
  • 1 & Half Cup Pecan Nuts
  • 3 Cups Vanilla Pod
  • 1 Eggs
  •  5 Sweet Pastry
  •  250 Grams
  • Maple Syrup
  • Ice Cream
  • Vanilla Essence
  • 25 ML Cream
  • 1 Litre Maple Syrup
  • 1 Cup Castor Sugar
  • 1 Cup Eggs
  • 10 Fig & Pecan Salsa
  • Green Fig Preserve 1 Small Jar
  • Pecan Nuts  1 Cup

METHOD

ICE CREAM : Bring the cream, maple syrup and the vanilla essence to the boil. In a separate bowl whisk the sugar and the eggs together until creamy. Slowly pour the hot cream over the eggs and continually stir. Pour the mix into a ice cream machine and freeze.

SALSA : Chop the pecan nuts and the fig preserve together and mix with the juice from the preserve. Place in a bowl and cover storing in a fridge.

PIE : Place the sugar in a heavy bottom pan and caramelize. Add the butter and the nuts. Add the cream and the vanilla pod and the syrup. Bring the mix to a boil and remove from the heat to cool. Prepare your pie tin with the sweet pastry. Blind bake the pastry at 180 degrees. Remove from the oven and allow the pastry to cool. Beat the eggs into the pie mix one a t a time until they are all incorporated. Pour the mix into the dish and place in a 165 degree oven for approximately 30 minutes.

Serve with ice cream and dollops of fig salsa
