Melkkos
1.5 l milk
500ml coconut cream
150 ml Water
½ cup dark rum
5 ml Salt
300 ml cake flour
Cold water
4tbs Butter
1 4 cm Cinnamon stick
80ml Brown sugar
3 star anise
1 tsp orange zest
Method:
In a medium sauce pot combine the milk, water, and rum, coconut cream and salt and bring to a boil. Reduce the heat and add star anise, cinnamon, orange zest and brown sugar. Simmer gently for about 8 minutes.
Put the cake flour in a large mixing bowl and sprinkle with cold water while rubbing the flour with your hand. There should form fine snowflake like crumbs. Add the crumbs to the boiling milk while stirring. Continue stirring while the mixture is cooking. When the crumbs are cooked (about 8-10minutes) add 4tbs of butter and stir to dissolve.
Rum roasted bananas
4 large bananas
50ml dark rum
Brown sugar
Butter for frying
Method:
Peel the bananas and slice lengthwise in half. Sprinkle with sugar and set aside for 10 minutes. When the bananas are ready, warm up a heavy bottom pan, add some butter to coat the bottom and fry the bananas till golden. Now add the rum and let the alcohol burn off. Place the pan with bananas in 170 C oven for 10min. Remove and set aside
Serve the melkkos in a small bowl with roasted bananas, toasted coconut and cinnamon sugar.
